We are all looking for different ways to serve chicken or share a new sauce with family and friends. This sauce made from roasted grapes is wonderful over grilled chicken or even with pork tenderloin. It can even be added to a cheese platter and used as a fruit spread.

 Roasted Grape Sauce


2 cups of red seedless grapes

2 tablespoons olive oil

10 to 15 sprigs of thyme

pinch of sea salt

1/4 teaspoon cracked black pepper

1 tablespoon  balsamic vinegar



On a rimmed baking sheet add the grapes, oil, thyme, salt, pepper and vinegar. Shake the baking sheet to coat the grapes with the other ingredients. Place in a 400 degree oven and bake for 15 to 20 minutes until the grapes have popped and begin to caramelize. To serve scatter over grilled chicken or place in a bowl and stir together to use as a spread with brie or cream cheese spread and crackers.
