Fresh Ideas for Blueberry Pie


Blueberry Lemon Galette 


1 rolled out 9 to 12 inch pie crust

2 cups berries

2 tablespoons cornstarch

juice & zest from half a large lemon

1 tablespoon sugar

1/4 teaspoon salt

1 egg yolk

2 teaspoons water

large crystal raw sugar, for dusting



Lay crust flat on parchment paper on a cookie sheet. In a bowl combine berries, cornstarch, lemon juice, zest, sugar and salt. Pour the berry mixture in the center of the crust. Let spread to within 1 1/2 inches of the edge. Fold the edges up around the filling. Brush the top of the crust with 1 egg yolk mixed with 2 teaspoons of water. Sprinkle crust with raw sugar. Bake in a 375 degree oven for 30-40 minutes.
